Before I kept kosher, Chicken Kyiv was the dish I ordered when I wanted to feel a little fancy without announcing it. That moment when the knife hits the center and garlic butter runs onto the plate? Pure theater. Pure comfort.

Quick answer

With chicken Kyiv, pour a crisp Chardonnay that has just a hint of oak. I reach for Covenant Lavan Chardonnay 2024: white peach, bright lemon and fresh acidity keep the crust crisp and the garlic-butter center luxurious, not heavy.

Going kosher didn't mean giving that up. It meant making it mine. Plant-based garlic butter still melts like a dream, and the golden crust stays crisp. Then I pour a white wine that can handle garlic, richness and crunch without getting lost.

The method is simple on purpose. The magic is temperature and seal: cold butter, tight wrap, patient fry, quick bake.

As a WSET Diploma candidate, I can tell you: garlic-butter chicken is a pairing trap if you grab the wrong white. Too oaky, and the wine tastes like furniture next to the herbs. Too thin, and the fried crust steamrolls it.

The lemon-peach freshness is the knife; the hint of oak is the silk napkin.

Tasting notes

Nose

White peach and bright lemon. Ripe enough to feel generous, citrusy enough to promise it can cut through richness.

Taste

Clean and crisp. Peach and lemon first, then a hint of oak and a soft texture. Not a butter bomb competing with the filling.

- Aciditymouth-watering freshnessFresh

Covenant Lavan Chardonnay is the lane I want: fruit, freshness, and just enough oak polish. The peach-lemon fruit rides with the garlic and parsley instead of fighting them.

**Why it works, simply:** good Chardonnay for fried, garlicky food needs acidity, that fresh "snap" that resets your palate between bites. Lavan's crisp line keeps the crust tasting crisp and the melting center luxurious instead of heavy. Then the finish stays clean, so every flavor on the plate pops.

## How to Make Kosher Chicken Kyiv

- Serves 4
- Bake about 10 min
- Meat

### Garlic butter center

- ½ cup plant-based butter, very cold
- 3–4 garlic cloves, minced
- 2 Tbsp fresh parsley, chopped
- Pinch of salt
- Tiny pinch of black pepper (optional)

### Chicken

- 4 boneless chicken breasts
- Kosher salt and black pepper
- ½ cup flour
- 2 eggs, beaten
- 1½ cups breadcrumbs (or kosher panko-style crumbs)
- Oil, for frying
- Lemon wedges, to serve

### Method

1. **Make the butter log.** Mash the plant-based butter with the garlic, parsley and salt. Shape it into a short log, wrap it, and chill until firm. The freezer for 15–20 minutes works if you're in a rush.
2. **Pound the chicken.** Place each breast between parchment and pound it to an even, thin cutlet. Season lightly with salt and pepper.
3. **Wrap.** Place a piece of the cold garlic butter in the center. Fold and roll tightly so no butter peeks out. If needed, secure with a toothpick, and remove it before serving.
4. **Coat.** Flour, then egg, then breadcrumbs. Press the crumbs on so the seal feels secure.
5. **Fry until golden.** Heat the oil in a skillet. Fry, turning, until deeply golden on all sides.
6. **Bake about ten.** Transfer to a 375°F oven for about 10 minutes, until cooked through. Rest one minute.
7. **The cut.** Slice at the table if you can. That hot garlic center melting out is the whole show.

**Hosting tip:** assemble and bread ahead, and keep them chilled. Fry and bake right before guests sit, so the crust stays loud and the center stays dramatic.

## How I'd serve it

Simple greens or buttered noodles. Crystal glassware. No need to over-explain: let the cut do the talking, then lift the Lavan.
